Thermomix Hong Kong Basic Cooking Class Recipe and Step-by-step Guide to make Three cup chicken

Ingredients

  • 3 garlic cloves
  • 10 g fresh ginger root, thinly sliced
  • 10 g fresh chillies, deseeded and cut into pieces
  • 10 g sesame oil, toasted
  • 800 g chicken legs, skin on, bone in, cut into pieces (3-4 cm)
  • 20 g rice wine (or Shaoxing Hua Tiao)
  • 15 g dark soy sauce
  • 15 g rock sugar
  • 30 g light soy sauce
  • 10 g fresh basil, leaves only

Steps

  1. Place garlic cloves into mixing bowl, chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  2. Add ginger, red chillies and sesame oil, sauté 3 min/ 120°C/speed 1.
  3. Add chicken, stir fry 15 min/Varoma/Reverse/speed .
  4. Add rice wine, dark soy sauce, rock sugar and light soy sauce, stir fry 10 min/Varoma/Reverse/speed .
  5. Add basil leaves, stir fry 1 min/Varoma/Reverse/speed Serve hot.
