Ingredients

Meatballs

40 g bread, fresh or day-old, cut into pieces
80 g milk
6-12 sprigs fresh parsley, leaves only
1 garlic clove (optional)
400 g ground beef
½ tsp salt
1 pinch black pepper
Oil, for greasing
2 eggs

Tomato Sauce

1 garlic clove
50-80 g onion, halved
20 g extra virgin olive oil
600 g canned tomato purée
1 tsp salt
1 pinch black pepper

Steps

Meatballs

  1. Place a small bowl on the Thermomix lid, weigh the bread and milk into the bowl, and set aside to let the bread soak in the milk.
  2. Place fresh parsley and garlic into the Thermomix bowl, and chop for 5 seconds/speed 7. Use a spatula to scrape ingredients to the bottom of the bowl.
  3. Add ground beef, eggs, salt, and black pepper. Squeeze excess milk from the bread and add the bread to the bowl. Mix for 10 seconds/speed 5, then transfer to a bowl and set aside.
  4. Brush the Varoma tray with oil. Rub a bit of oil on your hands, form the meat mixture into meatballs approximately 4 cm in diameter, and arrange them on the Varoma tray.

Tomato Sauce

  1. Place garlic, onion, and extra virgin olive oil into the Thermomix bowl, chop for 5 seconds/speed 5, then sauté for 3 minutes/120°C/speed 1.
  2. Add tomato purée, salt, and black pepper. Place the Varoma tray on top, and cook for 20 minutes/Varoma/speed 1. Pour the sauce over the meatballs and enjoy.
