Easy Chicken Soto

A simplified version of chicken soto which refers to yellow spicy chicken soup, a popular dish which can be found in Indonesia. Thanks Adviser Ms Sofia Fachruddin for her recipe.

Ingredients

A

4 candlenut (can be replaced with macadamia nut)
15g ginger
1 tsp turmeric powder (2cm fresh turmeric)
2 cloves garlic
3 shallots

B

10g salt
5g sugar
A dash of pepper
15g oil
2 pieces bay leaves
5 pieces kafir lime leaves
25g galangal, sliced
1 stalk lemongrass, bruised

C

½ chicken, washed
1,500g water or chicken stock

D

½ cabbage, washed and cut into strips
100g bean sprouts
2 eggs

Steps

  1. Place all ingredients in A into Thermomix mixing bowl. Blend 5sec/speed 6.
  2. Add ingredients in B, and fry 8min/120°C/speed 1.
  3. Add ingredients in C, boil 30min/100°C/reverse soft spoon
  4. Remove chicken, when cooled, debone and shred into small pieces
  5. Meanwhile continue boiling the soup for another 40min/100°C/reverse soft spoon
  6. While the soup is boiling, prepare ingredients D and place into varoma dish
  7. During the last 10 minutes of the boiling time, place the varoma dish on top of the mixing bowl.
  8. Serve with noodles, vermicelli or plain rice.

Tips

  • Serve with condiments such as fried shallots, coriander, spring onion, fresh tomato and a wedge of calamansi/lime.
