Thermomix Recipe and guide on how to make Wool Roll Bread

We can’t get enough of this bread that looks like a roll of wool! This Wool Roll Bread 毛线面包 is such a hot trend lately – a soft bread stuffed with raisins. Check out how you can make this with Thermomix® (Psst… we added some top choice cheese in it). Give it a try, it’s easy!


80g Milk
4g Yeast
300g Prima Bread Flour
5g Milk Powder
5g Salt
32g Sugar
1 Egg
110g Anchor Whipping Cream
3 Small packs dried golden raisins
100g Perfect Italiano Perfect Pizza Cheese


  1. Activate yeast and milk 2min/32°C/speed 1.
  2. Add bread flour, milk powder, sugar into mixing bowl and mix 30sec/speed 2.
  3. Add whipping cream and egg. Knead for 4min.
  4. Add salt and knead for another 2min.
  5. Remove dough from mixing bowl and shape into a large boule. Rest the dough for 20min.
  6. Shape into 6 rolls and roll out each roll.
  7. Cut half the roll into thin strips.
  8. Spread shredded cheese and soaked raisins all over the rolled-out rolls.
  9. Roll up into a cocoon shape.
  10. Let the rolls proof till they rise to the rim of the baking tin (more than doubled) ~2hours
  11. Bake in pre-heated oven at 170°C for 15min (no egg wash).
  12. Egg wash – 1 egg + 1 tbsp milk)
  13. Remove to egg wash before baking for another 10min (lower the temperature if the buns are too brown)


Line the entire baking tin.
